Chef´s Choice – Homemade BBQ-Sauces

Capers – White Wine Sauce

BBQ TimeSummertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.

Your imagination has no limits, changing and complementing the recipes to your taste!

Capers in brineIngredients

  • 60 g butter
  • 40 g wheat flour
  • 250 ml dry white wine
  • 1 onion, finely chopped
  • 1 egg yolk
  • 125 ml whipping cream
  • 1 tspn sugar
  • capers in brine (to your taste)

Preparation

Heat the butter in a sauce pan over medium heat, stir in the flour and cook both for a short time to get a light roux. Deglaze with white wine.

BBQ Capers White Wine sauceAdd the onion and cook about 1 to 2 minutes or until soft.

Mix in the egg yolk, cream and sugar, stirring thoroughly until sugar has dissolved.

Mingle in the capers.

Let the sauce cool down before serving.

Goes well with grilled chicken or fish.
